Set within a chic and atmospheric setting, guests can savour exquisite sushi, robatayaki grills and vibrant sharing plates, bringing Sora’s signature flavours and elegant dining experience to the heart of the hotel.
Whether for a romantic evening, a relaxed dinner, bespoke afternoon tea or a special occasion, the Sora takeover promises to delight the senses.
Masterfully Prepared Sushi & Robatayaki
Sora’s sushi chefs create masterful plates, from tuna nigiri and kingfish sashimi to inventive rolls like the Green Dragon and Firecracker Maki. Robatayaki highlights include sticky pork belly, Loch Duart salmon teriyaki, and miso-glazed black cod, delivering a true Japanese restaurant experience.
Sharing Plates & Bento Options
Dive into tapas like Korean cauliflower, edamame, and crispy rice bites. Express lunch features a Bento Box with sushi, robata, crispy chicken katsu, and refreshing sides, ideal for a midday break without compromising on flavour or ambience.

Afternoon Tea Rituals
We've added an exciting Oriental twist to Afternoon Tea: Japanese inspired sweets with matcha and miso, sushi and savoury snacks, and elegant surroundings make it anything but ordinary.
Paired with signature concoctions like the Umeshu Sour, Togarashi Margarita, and Yuzu Mojito, it's an experience like no other.
As we finalise the Brighton experience, the Afternoon Tea menu may see a few small changes before launch.
