You've experienced hotel restaurants and bars before. In the past they've been an 'avoid at all cost and head for the local eatery or watering hole before retiring back to your room' (and let's not even get you started about the room service).

Forget everything you ever believed about hotel dining and bars. Start believing in simple British classic dishes, uncompromising in quality and very generous in proportion. Believe in a glittering choice of superstar wines and Champagnes. Believe in the cheeky one after work, the school night Mojito, that world-famous fromage with a refreshing white Rioja just for the hell of it. Miss this one at your peril.

  • Daring to Keep it Local

    We've always dared to be different. And always will. Our Chefs have hunted high and low but never too far away the bring the region's hidden food secrets to your table. Whether it's kippers smoked from that hard to find coastal hideaway or the to-die-for crumbly cheese from a nearby family run dairy. We love it and embrace it 110%.

    You see them on the motorways, tearing through sleepy towns - great droves of articulated lorries carrying so called 'fresh' ingredients. Somewhere down the line they say its more profitable, but it's simply nowhere near good enough for us, for you and the community as a whole.

    So ended our long-distance love affair with long-haul deliveries. Instead, we dare to keep it local. You can taste the difference too. You can taste our commitment. With this in mind, we have launched an approach called 'Daring to keep it local'. These menus, in partnership with our treasured secret suppliers, are quite possibly the best we've produced since we opened our brasserie doors back in 1994. That's Mal Life.

    We dare to keep it local. How great would it be if everyone thought like this. Now that would be different.

    Donald Russell has built its reputation on a number of unique factors and maintained this through an uncompromised commitment to excellence. Having taken our name from co-founders; Scottish farmer William Donald and Master butcher John Stone, who traded under "Russell Meats", Donald Russell opened its doors to trade customers in 1974 and never compromise on quality or taste.

    At Premier Cheese, we care for our cheeses beyond providing them to our chefs.  We work only with the best establishments, united in our commitment to serving the finest meals to their customers.  We happily share our knowledge with them and their front of house colleagues, who in turn introduce the customers to a wonderful selection of farmhouse cheeses.

    England Preserves

    England's preserves - take two dedicated people, Sky and Kai, with an obsession for making jam that is bright and beautiful and as full of clear fruit flavours as if it had just come off your own stove top. Originally started out on borough market and now produce an exciting range of jams and chutneys.

    Graham's Dairy

    Graham's have been producing milk for three generations in and around the beautiful countryside of Bridge Of Allan. Back in the days, milk was still delivered door to door by horse and cart, with the horses raring to go at 4.30 every morning come summer or winter, rain or shine. As Bridge Of Allan grew, so did Graham's, and by the 1960s the company was supplying retail outlets across Stirlingshire. Today, Graham's is the largest independent milk producer in Scotland, still a family concern and proud to uphold the highest standards of quality and service.

    Johnny Walker and the Vino Voyages

    Headed up by world-class Sommelier Johnny Walker, every Mal bar sports a spectacular wine list, and regularly holds evenings for buffs and bluffers in the form of 'Vino Voyages'. Each voyage presents a guest wine producer and a sit-down feast perfectly matched to the featured wines.

     

    The Scotch Malt Whisky Society

    Next time you're in Aberdeen, sample the 'Angel's Breath'  -  whisky heaven on earth for die-hard spiritualists. In association with The Scotch Malt Whisky Society, the Mal has created a fortress of the finest single malts and blends from around the world. Kept under lock and key, these liquid assets are yours to enjoy when accompanied by the in-house whisky aficionado. When in town, Master Sommelier Johnny Walker (no relation) will be on hand to open up your mind and senses to the noble dram.

     

    Mixology

    Your Mixologist at the Mal is an artist. Skilfully blending and concocting, whatever your poison. You peruse the extensive list - Blackforest Martini or staple Tom Collins? Essential for high-octane weekends or impromptu school night forays.
